Easy Kale and Pomegranate Salad
Serves: 6-8
Ingredients:
1 bunch of kale (stems removed and chopped)
½ cup pomegranate arils
½ cup candied pecan halves
2 TBSP olive oil
Juice of 1 lemon
Directions:
Follow Easy Candied Pecans recipe (store unused candied pecans in airtight container)
Remove kale from stems and chop
In a large salad bowl, toss kale with olive oil & lemon juice
Add the rest of the ingredients
Nutrition (per serving): 130 calories, 10g carb, 11g fat, 3g protein
